Learn how to cook Bok Lgnor Kmao, local dish from Preah Vihear province

Bok Lgnor Kmao (Pounded Black Sesame) is a traditional dish of the Kouy indigenous people living in the northern part of Cambodia. Bok Lgnor Kmao is consumed daily by the Kouy people, as it can be packed and stored for a long time. Simply pick up a small piece of the paste and add a little bit of water. Then take the vegetable of choice and dip it in the sauce and enjoy!
Let us explore the cooking secret together! 

Ingredients:

  • Bar Fish
  • Black Sesame Seed
  • Garlic
  • Shallot
  • Dried chilies
  • Grilled Prahok (Khmer Fish Fermented)
  • Ripe tamarind
  • Salt
  • Sugar
  • Seasoning
  • Chicken powder
  • Vegetables such as bamboo shoot, cucumber, okra, long beans, eggplant, water lily, morning glory, or any other seasonal vegetables

Cooking instructions:

Step 1

  • Clean the fish, then grill it until it is dry. Remove the bone from the fish.
  • Roast the black sesame seeds and dried chili separately.
  • Peel the garlic and shallot and roast them to taste.
  • Chop and grill the prahok 

 Step 2

  • In a mortar, pound the black sesame seeds and keep aside.
  • Using the same mortar, pound together salt, roasted dried chilies, sugar, seasoning, chicken powder, ripe tamarind, garlic, shallot and grilled prahok.
  • After, add the grilled fish and black sesame seeds and pound into paste. Finally, taste and adjust the seasoning ( as you like).

Step 3

  • Pour the mixture onto a plate.
  • Wash and poach the vegetables and cut it into bite size pieces. 
  • Serve the vegetables along with the Black Sesame mixture.
